Ham Boiled in GUINNESS®


Serves 4

  • Piece of Gammon (about 4lbs in weight)
  • 2 onions
  • 4 peeled tomatoes
  • Knob of butter
  • Cloves
  • Teaspoon brown sugar
  • ½ can of GUINNESS® Draught
  • 1 bay leaf
  • 6 crushed peppercorns
  • Parsley stalks

Take a piece of lean gammon about 4lb in weight. Dice 2 onions, 2 carrots and 4 peeled tomatoes and toss them in a little butter in a saucepan. Place in the gammon, stuck with a clove or two, sprinkle a heaped tablespoonful of brown sugar all over, and cover with GUINNESS®. Bring to the boil and skim. Add a bouquet garni consisting of a bay leaf, 6 crushed peppercorns and some parsley stalks.

When the gammon is cooked, remove and slice it, and place to keep hot. Reduce the cooking liquor by quick boiling to about half, skim off all fat and strain. Serve a little of the sauce over the gammon slices and hand the rest separately.
