Mushrooms in GUINNESS®


Serves 4

  • 1½ pounds of large mushrooms
  • 2oz finely chopped onions
  • 2 finely chopped cloves of garlic
  • 1oz butter
  • ½ can of GUINNESS® Draught
  • A little roux (butter/flour mixture)
  • Salt and pepper
  • Few drops of lemon juice
  • ¼ cup of cream
  • 2 tbsp gravy

Trim mushrooms around the edges and cut off stalks. Melt butter in large frying pan and soften onions and garlic. Add mushrooms and seasoning and partly cook without letting onions brown. Add GUINNESS® and cook on full heat until GUINNESS® is reduced by half. Add cream and gravy and thicken with some of the butter/flour mixture. Adjust seasoning if necessary and serve on toast.
