Mushrooms on Toast


Serves 1

  • 1½ pounds of large mushrooms
  • One clove of garlic
  • A large walnut of butter
  • Pinch salt
  • Pinch cayenne pepper
  • Dash of Worchestire sauce
  • ¼ can of GUINNESS® Draught

First a word about mushrooms. It is not generally appreciated that, unless the mushrooms are very old, it is quite unnecessary to peel them.

Remove the stalks from your mushroom and put them aside for soup. Rub the inside of the saucepan thoroughly with a piece of cut garlic. Throw in a large walnut of butter and brown over a brisk fire. Toss the mushroom caps in this and add a little salt, a pinch of cayenne pepper, a small dash of Worcestershire sauce, and a 1/4 can of GUINNESS®. Broil the mushrooms briskly in this until the cooking liquor is reduced to a glaze. Serve on toast.
