Place potatoes in a large pot and cover with cold, salted water. Simmer for 20 minutes until tender. Drain potatoes and mash while they are still hot. Add mashed potatoes to a bowl and stir in cheese, ham, turmeric, chives, cayenne pepper, onion salt, egg yolks and melted butter.
Using a pastry bag, create cylinder shaped croquettes about 1 inch in diameter and 3 inches long. Place croquettes on a parchment paper lined baking sheet and put in the freezer for a few minutes. Pour flour onto a flat surface and roll each chilled croquette to coat. Next, whisk eggs and milk together in a small bowl and dip the croquettes into the mixture.
Pour panko breadcrumbs onto a plate and roll the egg washed croquettes to cover. Deep-fry all of the croquettes at 325°F for approximately 3–4 minutes until golden brown. Serve immediately.
Combine all ingredients in a bowl, mix well and enjoy.
