Honey Roasted Turkey Breast
Preheat oven to 400.
Rub a bit of honey, salt and pepper around the whole turkey. Let dry brine in fridge, unwrapped, overnight.
Heat smoker to 225.
Place turkey in smoker and cook until internal temp registers 160. Tent and let it rest.
Stout Honey Mustard
Mix Guinness® Extra Stout, mustard seeds, vinegar, salt and pepper in a glass bowl. Let it sit for two days to hydrate. Process in food processor for 2 minutes until smooth.
Add in honey and mayo and adjust seasoning if necessary.
Gently, butter and flat griddle one side of the soda bread slice.
To build the sandwich, place a soda bread slice, followed by shaved sage derby cheese then turkey, tomato, shredded lettuce, crust to schmear of mustard on top slice, crispy rashers “glued” to mustard on top slice. Close and slice on bias.
