Ingredients

8 Fresh Bratwursts

2 Cans Guinness Draught

1 Brown onion, sliced thinly

½ tbsp Salt

¼ tsp Pepper

8 Pretzel rolls

75 g Cherry tomatoes, quartered with stem attached

CREAMY SPICY STOUT MUSTARD

1-2 tbsp Reserved Guinness Draught

1-2 tbsp Pickled jalapenos, chopped

120 g Stone ground mustard

1 tbsp Mayonnaise

Method

Preheat grill to high heat.

In a pan, fry the onions until starting to colour, add the Guinness Draught and simmer with sliced onions, salt and pepper.

Add in fresh Bratwursts and simmer for 10-15 minutes, turning once, or until cooked through.

Reserve 1 cup of beer base and set aside onions.

Char sausages on grill to add colour and texture, 5-6 minutes.

Toss onions with cherry tomatoes, apple cider vinegar and season to taste.

Place sausage in pretzel roll, then top with creamy spicy stout mustard and charred onion and tomato relish.

CREAMY SPICY STOUT MUSTARD

Mix beer cooking liquid, pickled jalapenos, stone ground mustard and mayonnaise together in a bowl. Adjust thickness with more braising liquid if necessary.
