Ingredientes

1 Loaf of fresh Irish Soda bread, sliced ½ inch into “sandwich slices”

Irish Bacon/Rashers/Back Bacon – julienned

Sliced Smoked Turkey

Roma tomatoes, seasoned

Shaved iceberg lettuce

Mature Irish Cheddar, shaved with a vegetable peeler

HONEY-ROASTED TURKEY BREAST

1.4 lb Boneless, skin-on turkey breast, skin set aside for later use

1 tbsp Salt

½ tbsp Pepper

2 tbsp Honey

2 tbsp Butter, melted

STOUT HONEY MUSTARD

1 Bottle Guinness Original

300 g Brown mustard seeds

250 ml White wine vinegar

1 tbsp Kosher salt

1 tbsp Black pepper

2 tbsp Honey

Método

CRISPY BACON

Add 2 tbsp vegetable oil to pan. Over medium heat, crispy up bacon until crispy and golden brown.

HONEY-ROASTED TURKEY BREAST

Preheat oven to 200°C. Rub the turkey breast with a bit of honey, salt and pepper. Let dry brine in fridge, unwrapped, overnight.

Heat smoker to 100°C. Place turkey in smoker and cook until internal temperature reaches 70°C and allow to rest.

STOUT HONEY MUSTARD

Mix Guinness Original, mustard seeds, vinegar, salt and pepper in a glass bowl. Let it sit for two days to hydrate.

Process in food processor for 2 minutes until smooth. Add in honey and mayo and adjust seasoning if necessary.

SANDWICH BUILD

Smear one side of the soda bread slice with mustard and flat griddle.

Top the other soda bread slice with shaved cheese then turkey, tomato, shredded lettuce, crispy rashers and close with mustard smeared soda bread slice.

Cut in half and serve.
