Beer Crop - Ham & Cheddar Cheese Croquettes to Pair with Guinness

Deep fried, crunchy croquettes with sumptuous a ham and cheese potato filling. Served with horseradish aioli and Guinness Baltimore Blonde.

Ingredientes

6 Russet potatoes, peeled and quartered

230 g Sharp white cheddar cheese

230 g Ham, diced

1/8 tsp Turmeric

3 tbsp Chives, finely sliced

1/4 tsp Cayenne pepper

1 tbsp Onion salt

4 Egg yolks

2 tbsp Melted butter

4 Eggs

240 ml Milk

240 g Flour

480 g Panko breadcrumbs

HORSERADISH AIOLI

460 g Mayonnaise

2 tsp Garlic powder

2 tbsp Horseradish

1 tbsp Lemon juice

2 tsp Salt

Método

Place potatoes in a large pot and cover with cold, salted water. Simmer for 20 minutes until tender.

Drain potatoes and mash while they are still hot.

Add mashed potatoes to a bowl and stir in cheese, ham, turmeric, chives, cayenne pepper, onion salt, egg yolks and melted butter.

Using a pastry bag, create cylinder shaped croquettes about 2.5cm in diameter and 5cm long.

Place croquettes on a parchment paper lined baking sheet and put in the freezer for a few minutes.

Pour flour onto a flat surface and roll each chilled croquette to coat.

Next, whisk eggs and milk together in a small bowl and dip the croquettes into the mixture.

Pour panko breadcrumbs onto a plate and roll the egg washed croquettes to cover.

Deep-fry croquettes at 170°C for approximately 3–4 minutes until golden brown. Serve immediately.

HORSERADISH AIOLI

Combine all ingredients in a bowl, mix well and enjoy.
