1 cup Captain Morgan White Rum (plus extra to soak the fruit)
3 tsp Baking powder
1 tsp Almond extract
1 tsp Vanilla extract
10 Eggs
2 3/4 cups Plain flour
2 tbsp Mixed spice
2 2/3 cups Dried mixed fruit (raisins, currants, cherries)
