6 Shallots, sliced

3 Garlic cloves

4 tbsp Butter

480 ml Full fat cream

900 g Fresh or frozen peas (defrosted)

25 g Fresh mint

3 Lemons

120 g Flour

600 g Panko breadcrumbs

5 Egg whites

3 tbsp Salt

1 tbsp Black pepper

4.5 l Vegetable oil for frying

LEMON MINTED YOGURT SAUCE

3 Zest of lemons

25 g Fresh mint, chopped

735 g Plain yogurt, strained

1 tbsp Salt

1/2 tsp Cayenne pepper
