Chef Kwame Onwuachi is a New York city born, Nigerian-American chef. His Hops n John recipe, a unique take on the southern classic Hoppin' Johns, was created as a means to celebrate his community and serve as a tribute to his African-American roots.

Ingredients

150 g Bacon, or 1 ham hock plus 2 tablespoons oil

1 Celery rib, diced

1 Small onion, diced

1000 ml Chicken stock

1 Bottle Guinness Original

1 Small green bell pepper, diced

2 Garlic cloves, minced

225 g Dried black-eyed peas

1 Bay leaf

2 teaspoons Dried thyme

1 teaspoon Heaping Cajun seasoning

Salt

420 g Long-grain rice
