Preheat oven to 400°F.
Line a greased 12-inch pie plate with the puff pastry, cut away excess and discard. In a large sauté pan, melt butter and add apples, pears, cinnamon, vanilla, sugar, salt and simmer over medium heat for about 20 minutes. Stir gently and be careful not to break up the fruit. Evenly spread the fruit mix over the pastry shell and bake for 30 minutes or until pastry is golden brown. Allow the tart to cool for a few minutes then serve warm with vanilla gelato.
